I take acetyl l-carnosine regularly and it helps me. Regular zinc also fucks me up.Sorry for the late answer. I used California Gold Nutrition Zinc-L-Carnosine Complex and now I have a bottle of Nutricost Zinc Carnosine, both from iHerb.
I seldom use them because they make me constipated but when I have stomach issues, they calm it down.
Have you tried using regular zinc? if it is the carnosine part that causes some of your issues? Based on my experiences on Zinc Carnosine, I don't suggest taking it on an empty stomach.
