I just came across the most simple cookie recipe Ive ever seen which seems great for a ME/CFS patient to make (I'd use xylitol instead of the sugar in this).

Ingredients
Instructions
Step 1
Pre-heat your oven to 350 degrees
Step 2
Mix all three ingredients well
Step 3
Spoon small balls of dough onto an ungreased cookie sheet
Step 4
Gently press down, and form cross hatches using a fork on each ball
Step 5
Bake them for 8-10 minutes at 350 degrees
