This looks like an interesting new look at an old problem. Not only are foods less nutritious due to soil depletion, etc. than they were 50-70 years ago, But it looks like CO2 is having a little known but important impact - a shift to higher carbohydrate content in foods, and less protein and other nutrients...

Indeed. I have heard of this issue before but did not know the information in this article (i'm about 2/3 of the way through it)

Thanks a lot @Learner1 ! This is so interesting (and worrying also). If we add to that the quality of the water we drink and we use for agriculture - in Israel the majority of the supply comes from desalinated water which also seems to affect the mineral content of food- we are preparing to ourselves a bright future !
