Can't function with or without carbs anymore

outdarnspot.. have you had testing for hyperinsulinima to see if that could be causing your issue to carbs. That testing is done with a 2hr GTT but a doctor has to make a note on the test or the insulin results to be included too. Back when I seemed to be reacting to everything.. it turned out hyperinsulinemia was a big part of my issue and was giving me extra symptoms and flaring other symptoms up more.
