A question about the Shoemaker protocol

I see that Shoemaker recommends against amylose in the diet for mold patients, so that they can lower MMP-9. One source said it is due to raising blood sugar. But it seems like amylose is used to help with blood sugar. Does anyone know the reason behind avoiding amylose while detoxing mold? Thank you
