So seed/plant oils do cause heart disease and cancer! .. or Shall McDonalds use tallow fat again?

The most common fatty acids in beef tallow are palmitic, stearic and oleic acid, and while palmitic and stearic acids are inflammatory studied in isolation, if the oil also contains (in a good ratio which is important) oleic acid (an unsaturated fatty acid) then the inflammation that happens from the inflammatory acids in them does not occur according to the research! So I say yes it could have led to bringing back the beef tallow as they appear to be wrong about it from a inflammation standpoint at least.

Unsaturated fatty acids prevent activation of NLRP3 inflammasome in human monocytes/macrophages​

Oleic acid is an omega-9 fatty acid. It can be made by the body. It is also found in foods and highest levels are found in olive oil and also is in some other oils, but not all oils have it in good ratios with the inflammatory acids in them. https://pmc.ncbi.nlm.nih.gov/articles/PMC3793604/

Very nice study, and very good news about olive oil.
