Histamine Intolerance Symptoms Change?

I’m wondering if histamine intolerance symptoms change with each trigger. Basically, sometimes when I eat a lot of red meat, my face turns red and I get very hot ears and face. Sometimes I can even start sweating. Other times my skin feels extra sensitive and prickly. Every other day I get mild headaches and can’t figure out what’s triggering that. Is this normal? Is there not a set pattern with histamine intolerance or am I missing some small critical detail?

My histamine symptoms seem to shift sometimes. Generally, itching. But I only found out after I'd quit eating histamines that it also was triggering nightmares....Looking for these references, I'm also reminded frozen shoulder is included...I had this on both sides, years apart. There's also some overlap with mast cell problems and symptoms.
