Throat sensation - Allergy or ???

Four days ago, I took a liquid multiminerals (was deficient)

Reaction was not typical allergic reaction.

It felt as if I had something stuck in the throat.
The tongue was not swelling, no hives,
no wheezing, but still felt as if something stuck at the
back of the throat. I went to ER. Doc said windpipe looks
normal.
This lasted for 6 hours. When I drank
water, it didn't flow smoothly at the back of the throat.

I was given antihistamines, which I can't tolerate.

Doctors and allergists to date, don't know.
(I had similar a few years back)

The following day, I reacted to cheese, tingles in the lips,
and cucumber, as well as the same sensation in the throat.

Yesterday and today, everything I tried eating caused the
same sensation of something stuck at the back of the throat.
Drinking water does not flow smoothly down the throat. Had
the same sensation all day today.

Is this how an anaphylactic reactions starts, but
does not develop further? I understood it was the airways
or the bronchiles that are affected.

I read neurological involvement as in TPRV and NMDA receptors
which can cause "sensations" triggering something akin to allergic
reactions and MCS from which I also suffer.

I was offered antihistamines, but I can't take those.

I also read that the vagus nerve may be implicated, and mast
cell diseases.

I will try eating, once I have the prescribed epi-pen
as a precaution.

have cascade in an

Your symptoms do sound like histamine intolerance. It's fixable if one supplements with diamine oxidase. You also need to make sure you are not deficient in either copper or vitamin B6.

I wonder if you had epiglottis swelling/inflamation that was not severe enough for the ER doctor to see it as abnormal. Anaphylatic reactions can cause swelling to the extreme that the airway is blocked off completely. I'm think there are less severe reactions where it is bothersome to swallowing but barely blocking the air flow.
