I have found a great recipe for beetroot and chickpea burgers, spiced up with Moroccan seasoning, fresh mint and lemon rind. They freeze well and taste delicious! Then when I don't feel up to making dinner, I just cook a couple straight from the freezer! Happy to share the recipe if anyone would like it..
