B12 is stored in the liver to a certain extent, so if you stop B12 today and provided that you have an adequate amount of B12 stored in the liver, you would indeed not run out very quickly (not sure if as long as 5-7 years).
But of course that assumes your body is absorbing B12 well enough to keep a decent amount stored in the liver in the first place, which only a blood test can confirm.
