Happy holidays everybody. Just thought I would post a healthful recipe I just discovered recently. It's for homemade sauerkraut. Enjoy!

recipe:
1 qrt water
2 Tbp Salt
1 Tbsp sugar
3/4 cup vinegar (cidar works good)
1/4 olive oil
1 tsp Garlic powder or 4 cloves of fresh.
1 medium carrot
1 medium head green cabbage
1) bring water to boil
2) Add salt, sugar, vinegar, oil, garlic and stir into brine.
3) With brine still hot, but not boiling hot, add in cabbage and carrots to brine
4) Place lid weight directly on cabbage to keep the cabbage completely submerged in brine. Let sit at room temperature for three days. Then refrigerate and serve cold.
