Why do Proteolytic enzymes help MCAS?

On the mast attack site, its noted that proteolytic enzymes help mast cells and this has been my personal experience .. however, there's no explanation re the mechanism of action or WHY it's helpful.. does anyone know?

I'd like to know too. I'm going to guess it's because it helps break down food including histamine in food thus leaving less for your body to deal with?
