Thanks for this Ema. I've been remarking on the Resistant Starch and Miyarsin threads my dismay at discovering that Miyarsin includes corn starch, which is gluten cross-reactive. Some suggest that the bacteria will eat the cornstarch. Another suggestion for me to culture it in yogurt, which might be worth trying. Maybe it's due to my underlying Hashimoto's, I think I'm very susceptible to gluten cross-reactive substances. I've read on celiac forums that gluten antibodies (?) can remain active for up to 5 years after stopping all gluten intake. I'm very reluctant to push this particular envelope.
