The short answer, I believe that Turkey Tail mushrooms are the best studied mushrooms so you can peruse studies on google scholar

Also, list of things that increase NK Cells:
green tea, inosine, immunovir, LDN, maitake/shitake/cordyceps/reishi mushrooms, AHCC

I have poor NK function and low NK cells overall.. plus, I've been experimenting w mushrooms lately and found this study interesting:

Specfically, a couple of tables:

1) Basic Cytokine Patterns - TH1 vs TH2

2) Cytokine Modulation - specific cytokines modulated by specific mushrooms:

I tried Coriolus, it made me feel worse like most supplements so gave up.

Dr. Jean Monro of Breakspear Hospital, has demonstrated in a group of 36 patients who have had defined chronic fatigue syndrome and autonomic dysfunction that Coriolus MRL has been an immuno-therapeutic agent. It has improved natural killer cells numbers by 35% in this group with a two months course of treatment.

I've been taking this supplement over the last couple months and it's my impression it's quite strong. I'm finding the antimicrobials I use are having a whole other effect. One downside to this supplement is it's flared up my ankylosing spondylitis, however it's manageable. The other downside is the cost, so I'm thinking of buying the herbs and mushrooms on their own at a fraction of the cost.

Ingredients

Transfer Factor E-XF (a patented concentrate of transfer factors and other natural components from cow colostrum and egg yolk), NanoFactor extract (a proprietary concentrate of nano-filtered cow colostrum.), Cordyvant Proprietary Polysaccharide Complex (IP-6, Soya bean Extract, Cordyceps sinensis, Beta-Glucan (from baker's yeast), Beta-Glucan (from Oat), Agaricus blazeii Extract, Mannans (from Aloe Vera), Olive Leaf Extract, Maitake Mushroom, Shiitake mushroom), and Zinc.

I have not actually had one.

According to my notes:
LabCorp did one in 2013.
Redlabs measured perforin mRNA to evaluate NK cell activation in 2014. The validity of this test was questioned on this forum.
