I've been taking Ampicillin and Flagyl for a gut infection (Streptococcus) for the past 4 days. I've experienced an increase in GI symptoms (foul smelling stools, stomach gargling etc.), as well as increased anxiety/depression, POTS, lightheadedness etc. However, I don't experience any other classic 'herx' symptoms such as fever, join pain etc.

Is this confirmation that I do not have Lyme/a Lyme-like infection?

Herxing is very overrated. Even people who truly have Lyme Disease don't always herx when taking antibiotics.

Yeah. I'm concerned some dodgy Lyme docs use the term so that whether patients feel better or worse after treatment they can claim 'see, it's worth carrying on with'.
